In my ideal world, I would only eat fermented grains. This does not always happen, sometimes we run out of bread and there is no time for the multi-day process of making leaven. So I make two quick breads from this bread.

It’s so simple, contains only a small amount of yeast and is super light and sweet, but still 100% whole wheat. The handling time is less than half an hour and you can have hot bread on the table in two or three hours. If you’re not eating 100% whole grain bread, this is a really easy (and delicious) place to start.

How To Make Whole Wheat Bread

  • Mix 3.5 cups of warm water, 1.5 tsp. yeast and 1/4 tsp. the honey in your mixing bowl and leave the yeast to the test.
  • Then mix and add half of your 7 cups of whole wheat flour (3.5 cups), 2 tsp. 1 teaspoon salt and 2 tablespoons olive oil.
  • Mix everything and let it sit for a minute. You can just use a wooden spoon here.
  • Now add the second half of the flour (additional 3.5 cups). I do this part in the Kitchenaid. Mix on high power for 7 min. Then let stand for 15 minutes.
  • Empty the dough on a floured surface and divide it in half (I use one of these large pastry scrapers). It will be quite sticky and stretchy, so work quickly and with lots of flour.
  • Shape loosely into loaves, put it in two pans and let it rise until it sticks on top of the pan. I line my pans with parchment paper and reuse them over and over again.
  • Bake the bread at 350 for 35 min.

Last step: cut a large fatty piece, coat it with butter and honey and sink your teeth! At least half a loaf always disappears in the first minutes after removing from the oven. The second bread that I put in the freezer where it keeps and thaws beautifully. Enjoy it!
