A familiar cry echoes in our house at the end of each work week. “Friday night pizza!” There’s something comforting about knowing what’s going to be on the menu. After a long week, the last thing I want to do is think about … the menu, everything. We have some favorite recipes that we rely on, such as the grilled shrimp and pesto pizza or a good old pepperoni for the kids. For my husband and I, our first choice (and the pizza most requested by our friends) is a Thai chicken pizza, topped with homemade peanut sauce and topped with fresh vegetables, such as red pepper and carrots. Paradise!

Usually I mix and knead a double batch of whole wheat pizza dough (we like leftovers the next day), but there are times when I don’t even feel as energetic. This is where whole wheat naan comes in handy. Naan is a traditional Indian bread served with curries and dals, but it works wonderfully like a makeshift pizza dough. You are guaranteed to find naan in an Indian food market, but many high-end grocery stores offer packages of whole wheat or flavored naans.

The peanut sauce is the one I adapted from a recipe from Cooking Light Magazine years ago. We mix it with soba noodles or whole wheat spaghetti, or we use them in sandwiches. He’s the star of the show in this naan thai chicken pizza recipe.

Recipe:
Preheat the oven to 425 degrees F. If using a pizza stone, heat the stone in the preheated oven for about 10 minutes.

The peanut sauce:
In a blender, combine the sesame oil, peanut butter, soy sauce, rice wine, water, rice vinegar, canola oil, brown sugar, ginger and gravy. garlic chili. Mix until smooth. (Use leftovers for sandwiches.)

Place 2 pieces of naan on a pizza peel or on a baking sheet (if you are not using a pizza stone).

If you are using a baking stone, transfer the pizza from the skin to the stone. If you are using a baking sheet, place it in the oven.

Bake in the oven until cheese is melted and naan bread is golden, 7 to 8 minutes. Transfer the pizzas to a cutting board and let stand for 5 minutes before slicing.

Repeat with the other ingredients. Slice the pizzas and garnish with chopped cilantro. To serve.

Ingredients

The Peanut Sauce:

  • 1 tablespoon sesame oil
  • 1/4 cup peanut butter
  • 3 tablespoons soy sauce
  • 1 1/2 tablespoons rice wine or sherry
  • 1 1/2 teaspoons water
  • 2 1/4 teaspoons rice vinegar
  • 1 1/2 teaspoons canola oil
  • 1 1/2 teaspoons packed brown sugar
  • 1 1/2 teaspoons minced fresh ginger
  • 1/4 teaspoons chili garlic sauce or red chile flakes

The Pizza:

  • 4 pieces whole wheat naan
  • 2 cooked boneless skinless chicken breasts, cut into bite-sized pieces
  • 1 red bell pepper cut into thin strips
  • 1 large carrot peeled & cut into matchsticks
  • 1/2 cup grated mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup minced cilantro

  • Repeat with the remaining ingredients.
  • Slice the pizzas and garnish with minced cilantro. Serve.
