What makes cheesecake so tasty? Cheesecake (especially this mini Oreo cheesecake recipe) is one of my favorite desserts of all time. It is perfectly rich without being overly sweet and makes any meal a special occasion when served.

This particular version takes a standard cheesecake recipe, but adds a delicious twist: the crust is made from crushed Oreo cookies! The cheesecake topping is sprinkled with pieces of crushed cookies. Guess what’s on top? Yep, no more Oreos.

I also love that these mini Oreo cheesecake bites are absolutely party worthy. Whether you’re preparing them for a baby shower or for a birthday, your host will appreciate how easy it is to serve them.

Why I love these mini desserts

This particular recipe happens to be for mini bites of Oreo cheesecake. I love individual desserts for so many reasons.

They are adorable. Let’s start with the most obvious: the little desserts are so cute!

Integrated portion control. These mini cheesecakes with an Oreo crust are really decadent. I firmly believe that everyone should enjoy the dessert – and by keeping the smaller portions with a mini dessert, you can really have your cake and eat it too.

Less noise. Making mini-bites of Oreo Cheesecake seems to be more difficult than making a bigger dessert, but I found the opposite. It is just as easy to make the smaller version, and they are much easier to pass out and enjoy than trying to cut a cake perfectly.

  • Create your crust. The crust is made up of two simple ingredients – butter and crushed Oreos, pressed into mini cheesecakes and baked for a few minutes.
  • Create the cheesecake layer. These oreo cheesecake mini bites have a simple (albeit delicious) cheesecake made from a handful of basic ingredients, including egg, cream cheese, sugar and, of course , the chopped Oreos.
  • Bake and let cool. Once the cheesecakes have cooled, place them in the refrigerator to cool them.

I made this recipe once or twice (or ten) and learned a few tricks along the way. Here are some insider tips to make sure the cookies and cream cheese cake turn out to be perfect every time.

  • Make sure each layer has time to cool. After baking the crust, it should cool slightly before adding the second layer. After baking the cheesecake layer, chill your cheesecake on the counter for several minutes before placing it in the refrigerator to cool it completely.
  • You will know that the cheesecakes are baked when inflated and are slightly shaky when you gently shake the tray.
  • The secret to eliminating air bubbles in your cheesecake layer is to tap the pan on the counter several times before baking it. It will also help prevent the Oreo mini cheesecake from cracking and cracking.
  • Use your fingers to press the crust. Whenever you make mini cheesecakes with an Oreo crust, you will need the crushed Oreos to form a dense, firm layer on the bottom. The best way to do this is to use clean fingers to press the diaper firmly.
  • If you don’t have a mini cheesecake pan, you can use a muffin pan instead. You will need to line the pan with paper liners and you will get 8-10 cheesecakes instead of 12. Because they are slightly larger, you may need to adjust the baking time by a few minutes.

To make-ahead

If you’re looking for an easy dessert to prepare in advance, look no further. These mini cheesecakes with Oreo crust can be made up to 3 days in advance when packaged and stored in the refrigerator. Make sure they have had time to cool completely before being packed and refrigerated.

You can even prepare these Oreo mini cheesecakes a few weeks in advance, then wrap and store them in the freezer. Whenever you want to enjoy it, remove it and detach it in the microwave at 30% power for 30 to 45 seconds.

If you plan to prepare them in advance, do as usual, then wait for the whipped cream – this should be done just before serving.

Ingredients

Crust

  • 10 Oreo cookies
  • 1 Tablespoon butter , melted

Cheesecake

  • 12 ounces cream cheese , softened
  • 1/2 cup sugar
  • 2 teaspoons vanilla
  • 1 egg
  • pinch of salt
  • 1/2 cup chopped Oreo cookies (filling removed)

Topping

  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 12 mini Oreo cookies for topping

Instructions

Crust

  • Preheat the oven to 350°F. Prepare a mini cheesecake pan by spraying with cooking spray.
  • Crush the Oreo cookies until fine and mix with the melted butter. Spoon into the prepared pan, adding about 1 1/2 teaspoons to each well of the tin. Press the crust down with your fingers. Bake five minutes, then remove and let cool slightly.

Filling

  • While the crust is baking, beat together the cream cheese, sugar, vanilla, egg and salt until well combined. Fold in the chopped Oreo cookies. Spoon into the cheesecake pan, filling each well nearly full. Tap gently on the counter to remove any air bubbles.
  • Bake 15-18 minutes, or until the cheesecakes are puffed up and only jiggle slightly when shaken gently. Remove and let cool, then chill in the fridge.

Topping

  • When the cheesecakes have chilled, whip the heavy cream until light and fluffy. Beat in the powdered sugar. Pipe onto the cooled cheesecakes and top each with a mini Oreo cookie. Enjoy!

Notes

  • You could also use a regular muffin tin lined with paper liners instead, but you will most likely get 8-10 mini Oreo cheesecakes instead of 12.
